Serves: 6 to 8
For this recipe, you will need:
Crust
3 cups All purpose Flour, cold
1/2 cup Butter, cold, cut in small cubes
1 tablespoon Sugar
2 tablespoons Cold water, more if necessary
1 each Egg white
1/4 teaspoon Salt
Streusel Topping
1 1/2 Hazelnuts, peeled, toasted, roughly chopped
1/3 cup (packed) Brown Sugar
1/3 cup + 2 tablespoons Sugar
1 1/4 cup Bread flour
3/4 cup Butter, cold cut in small cubes
1/2 teaspoon Cinnamon, ground
1/2 teaspoon All-spice, ground
1 teaspoon Salt
1/2 teaspoon Vanilla extract
Pie Filling
6 each Granny Smith Apples, peeled, cored, cut into 1/4 inch slices
2 1/2 tablespoons Corn starch
3/4 teaspoon Cinnamon, ground
1/4 teaspoon All-spice, ground
1/4 cup (packed) Brown sugar
1/4 cup Sugar
1/4 cup Butter, cut into cubes
Directions:
1) Preheat oven 425 F
2) To make the crust – shift the flour, salt and sugar together, add the cold butter and blend by had to create pea size lumps. Add the egg white and water, blend to form a ball, flatten, wrap and chill for at least 1 hour
3) To make the streusel topping – combine all the ingredients in a food process, process until lumps form. Remove from the processor and work with a spoon to blend all ingredients
4) To make the pie shell – roll out enough dough to fit a 10-inch pie pan, line the pan with dough. Set aside to rest for at least 30 minutes
5) To make the Pie Filling – Combine all the dry ingredients and mix well. Toss with the apples and place in the prepared pie shell. Dot apples with the butter, and cover with the streusel topping
6) Bake in the pie in preheated oven for 15 minutes
7) Reduce heat to 375 F and bake until crust is golden brown and apples are cooked, 25 to 35 minutes
8) Remove from oven, let cool
